This homemade, comforting home fries recipe is a quick weeknight dinner side dish the whole family will love.
You can easily pair these lightly seasoned home fries with hamburgers, sandwiches or a steak salad, for a lighter meal.
Home fries are a crowd-pleasing recipe to have on-hand to serve at a summer barbeque, while also tasting hearty enough to bake in the depths of a cold winter’s night.
My mom is the best homecook I know. As a family, we knew we were spoiled with our mom’s cooking when we visited friends or family where food was being served. No matter what the meal was, everyone gravitated to my mom’s food.
Sitting at the kitchen island, chatting away about life, I can recall the myriad seasoning scents that filled the room.
These seasoned home fries will make your own home smell inviting, with just a little Lawry’s Seasoned Salt. Unmistakable in its flavor profile, I recommend Lawry’s as a pantry staple for such occasions that call for a hint of something savory (and different).
Home Fries Recipe Ingredients
As far as the complexity of recipes goes, these seasoned home fries are comprised of only a few ingredients and take very little time to prepare and bake.
I find the most time consuming part of preparing this side dish is the cleaning and cutting of potatoes. At least with this recipe you leave the potato peels on. (I greatly dislike peeling potatoes.)
Here is the list of ingredients you will need to make this home fries recipe:
- Yellow potatoes, cubed - Buttery in flavor, use yellow potatoes for the best tasting home fries. Keep the peel on to achieve the rich caramelization that will occur during the high-heat baking this recipe calls for.
- Butter, salted - The richness of this side dish owes a lot to the salted butter. You can try unsalted butter to better control the amount of salt present in this dish, if you prefer.
- Lawry’s Seasoned Salt - This seasoned salt is where most of the savory flavor comes from in these home fries. It is potent, so go light and add more after taste-testing if need be. As I say, you can always add more but you can’t take it away.
Variations:
- Add a spicy punch of heat with Tony Chachere’s Original Creole Seasoning instead of Lawry’s.
- Use Lipton Onion Soup and Dip Mix as a replacement for Lawry’s. Be careful to not use the whole box, as it is quite salty. Mix in one tablespoon at a time.
- When serving, sprinkle fresh parsley on top for a pop of freshness
How to Make Home Fries
- Cube the potatoes, leaving the peels on.
- Melt the butter.
- In a mixing bowl, combine the potatoes and melted butter. Shake well to mix.
- Add the Lawry’s Seasoned Salt one teaspoon at a time to avoid over salting. Shake to mix. Repeat until coated and you are satisfied you have enough salt but not too much. You can season to taste after baking.
- Spread the potatoes in a single layer in the roasting pan. You should not need to butter or oil the pan, as there should be enough on the potatoes to not warrant additional grease. I have the Pillivuyt Rectangular Roasting Pan and love it. It's substantial as well as still made in France, so it should last generations.
- Bake at 425 for 20 minutes.
- After 20 minutes, turn the potatoes and bake for another 20 minutes.
- After the second 20 minutes have elapsed, turn the potatoes again. Bake for about another 10 minutes.
- Remove the potatoes from the oven. They should be a nice golden to dark brown color, indicating they are done. If you prefer your potatoes even more caramelized, continue to bake in 5-minute increments, ensuring they don’t burn.
- Serve with the rest of your meal and any condiments, such as ketchup or ranch dressing.
Serving Suggestions
Serve seasoned home fries as an appetizer, side dish or snack. Use white ramekins to portion out servings for a much cuter, more organized presentation. I recommend Apilco ramekins or Emile Henry ramekins from Williams Sonoma, both of which are still made in France.

How to Store Seasoned Home Fries
Leftover home fries should be stored in a container in the refrigerator for up to three days.
When reheating, you can certainly use a microwave. However, if you want to add a bit of crispness, reheat on a low setting in the oven for a few minutes.
