    This is a simple, fool-proof recipe for how to roast cashews. Roasted cashews are a nutritious snack or appetizer when you’re craving something savory.

    Learning how to roast cashews doesn’t require any particular set of skills in the kitchen. In fact, this roasted cashews recipe is easy and simple to make, calling for only a few ingredients.

    In under 30 minutes, your home will take on the savory, sweet scent of roasted cashews. Read more for how to roast cashews.

    At our home, roasted cashews are one of our go-to snacks. Since cashews contain high amounts of protein and fat, roasted cashews are a satiating snack to have around.

    The only thing about cashews—any nuts, actually—is that they can go rancid if not properly stored or consumed fairly quickly.

    I touch on how to store roasted cashews later in the recipe section, but buy some of these 18oz glass storage jars with bamboo lids to store nuts, seeds or any other pantry dry goods. This brand also carries spice jars.

    Roasted Cashews Recipe Ingredients

    These roasted cashews are easy to prepare and take very little time in the oven. Given the fact this recipe calls for only three ingredients, you will have this snack ready in no time.

    • Raw cashews - The star of this recipe, buy the highest quality cashews you can afford.
    • Olive oil - Gives roasted cashews a very light flavor. Technically, you can use any oil you prefer, but I use olive oil for practically everything.
    • Salt - When roasting cashews, a little salt goes a long way. Season to taste.

    Variations:

    • To make savory seasoned roasted cashews, substitute salt for Lawry’s Seasoned Salt. It is potent, so go light and, if needed, add more after taste-testing.

    • Use paprika for smoky seasoned cashews, but go easy on the salt or skip it entirely.
    • For a spicy kick, use Tony Chachere’s Original Creole Seasoning in lieu of salt.

    How to Roast Cashews

    1. In a mixing bowl with a lid, combine raw cashews, olive oil and salt. Shake to mix.

    1. Spread the cashews in a single layer in a roasting pan or baking sheet.

    1. Bake at 350 for 10 minutes.

    1. Mix the cashews in the pan. Bake for another 10 minutes. They should be a nice golden color, indicating they are done. If they seem too light colored, continue to bake in 1-minute increments, ensuring the cashews don’t burn. There is a very fine line between nicely done and burnt nuts.

    1. Allow to cool for 5-10 minutes.

    Serving Suggestions

    Serve roasted cashews as a snack or appetizer.

    • Snack - Roasted cashews make a great afternoon snack. If you have kids, roasted cashews make a wonderful after school snack, with a balance of cards, salt and protein.
    • Appetizer - Prepare roasted cashews with a duo of other nuts as an appetizer for a party, or served with other delicious foods like creamy deviled eggs and 7-layer dip. Be sure to provide serving spoons as well as individual spoons, so guests don’t have to eat with their hands. Serve in small individual bowls, such as these stunning white porcelain ramekins.

    How to Store Roasted Cashews

    As with most nuts, once opened roasted cashews can become rancid if not properly stored or not consumed in a short amount of time.

    Roasted cashews can be stored in the refrigerator or freezer. You can also store them at room temperature in an airtight container for a much shorter period of time, such as a week or two. However, If they taste off, do not eat them.
